CHOCOLATE DATE CRUNCHIES

INGREDIENTS:

1 cup of Hadley® Deglet Noor dates, chopped

1/2 cup of butter

1/3 cup of brown sugar-firmly packed

1 cup of flour- sifted

1/2 cup of chopped peanuts

1/2 cup of semi-sweet chocolate chips

1/4 cup of water

 

     

INSTRUCTIONS:

Preheat oven to 375 degrees.

Peanut Crunch mixture:

Cream butter with the brown sugar. Add the sifted flour. Mix until dough forms. Add the chopped peanuts. Crumble onto cookie sheet. Bake at 375 degrees 12-15 minutes, until golden brown. Cool. Break up cookie mixture into coarse crumbs.

Combine in a sauce pan the Hadley® dates, semi-sweet chocolate chips and water. Cook over low heat until thick and dates have softened and blended into chocolate. Stir in 2 1/4 cups of the peanut crunch mixture. Crush remaining peanut crunch mixture a little finer and set aside.

Shape the Choco-date mixture into two 8-inch rolls. Roll in crunch mixture. Wrap well. Store in refrigerator. Slice into 3/8 inch slices.

Yield: 3 dozen crunchies
